White tea has caught the wide attention of tea lovers, nutritionists, and scientists. The many studies indicating that white tea is rich in anti-oxidants, anti-viral and anti-bacterial benefits, are leading more people to drink white tea.White tea comes from the same plant as other teas, the camellia sinensis. However, it is harvested much earlier than other teas, before the leaves are fully open. At this point in the growing process, the tea buds are still covered by fine white hair, hence the name white tea.However, each year more and more white tea comes from India and Sri Lanka, making these the two fastest growing regions for the production of white tea. Many people are not familiar with white teas from these countries. The most popular cultivars for white tea include Da Bai, Xiao Bai, Narcissus and Chaicha bushes. Based on the different standards of picking and selecting the white teas, they can be classified into different grades.Do not pour boiling water on white tea leaves; the temperature should be a bit shy of the boiling point. And, experts recommend that you not use sweetener or milk in white tea; it should be served plain.

The leaves are simply steamed and then dried. Sometimes the leaves are even steamed and dried right in the tea fields and dried in the sun to protect the delicate flavor.White tea is different from black and green tea in two important ways; the maturity of the leaves at harvest and the actual tea processing. It's the ability to harvest white tea at exactly the right time. The same tea plants that produce the white tea could possibly be used to produce multiple pluckings later in the growing season that will be used to make black or green tea.Ceylon is the colonial name for Sri Lanka. Sri Lanka is the third largest tea producing area in the world, but produces primarily black teas. In fact, tea production is Sri Lanka's largest employer, providing work for more than one million residents. White tea is healthier than other teas. It is the first tea to be harvested in the spring, and it consists of the finest leaves and buds of the tea plant. The leaves and buds are simply hand picked, dried and shipped.

There are three different cultivars of White tea tree - Big White, Narcissus White and Vegetable White with the Big White as the finest and most popular. There are also three different types of White tea based on different ways of plucking - Silver Needle (only one bud is plucked). The best way to infuse white tea is to use a high quality tea pot or infuser and then steep white tea in purified water that is below the boiling point. Use of high quality purified, oxygenated water will add to the flavor of the tea.Compared to the amount of black and green tea grown in the world, there is very little white tea. This makes the tea more expensive and much harder to find.White tea can also help lower your blood pressure. White tea has been shown to thin the blood and improve the function of the arteries. This also helps protect us against strokes. White tea is grown in several places all over the world nowadays, but it is a particular specialty of Fujian province in China. There are a number of varieties of tea cultivators in the region.
